  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs with melted butter and granulated sugar. Press into the bottom of a springform pan. Bake for about 10 minutes.
  2. In another bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, followed by eggs one at a time. Fold in sour cream until blended.
  3. Pour cheesecake filling over the cooled crust. In a saucepan, combine diced apples with brown sugar, cinnamon, cornstarch mixed with water, and lemon juice; cook until tender.
  4. Layer apple mixture over cheesecake filling, then sprinkle crumble topping made from flour, brown sugar, and butter.
  5. Bake at 325°F (160°C) for about 60 minutes until set but slightly jiggly in the center. Cool gradually in the oven before chilling for at least four hours.
