  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • 8 oz unsalted butter, diced and very cold
  • 69 tablespoons ice water
  • 2 large honey crisp apples, peeled and diced small
  • 3 tablespoons salted butter
  • 2 tablespoons apple juice
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup brown sugar
  • 18 oz fresh blackberries
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • 1/4 cup raw or turbinado sugar (for sprinkling)

Instructions

  1. Prepare the crust by mixing flour, sugar, and salt in a stand mixer. Add diced cold butter and blend until sandy. Gradually add ice water until dough clumps form. Chill for at least one hour.
  2. For the apple filling, sauté diced apples in brown butter, then mix in apple juice, vanilla, cinnamon, and brown sugar until syrupy; cool.
  3. Roast blackberries with sugar and vanilla until thickened; allow to cool.
  4. Roll out chilled dough to 1/8 inch thick and cut into pumpkin shapes. Cut faces on half of them.
  5. Assemble by placing filling on uncut shapes, topping with cut shapes, sealing edges with a fork, brushing with egg wash, and sprinkling sugar.
  6. Bake at 375°F (190°C) for about 25 minutes until golden brown.
