  • 5 tablespoons salted butter (melted)
  • 1 cup almond flour
  • 2 tablespoons confectioners sweetener
  • 8 ounces cream cheese (softened)
  • 1 egg yolk
  • 1/3 cup confectioners sweetener
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 3 large eggs
  • 1/3 cup lemon juice
  • 2 tablespoons lemon zest
  • 1/2 cup confectioners sweetener
  • 1/3 cup coconut flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8 inch pan with aluminum foil.
  3. In a mixing bowl, combine melted butter, almond flour, and confectioners sweetener for the crust. Press into the bottom of the lined pan and pre-bake for about 7 minutes until lightly browned.
  4. While the crust cools, blend cream cheese, egg yolk, confectioners sweetener, vanilla extract, lemon juice, and lemon zest until smooth. Spread over the cooled crust.
  5. In another bowl, mix eggs, lemon juice, lemon zest, confectioners sweetener, and coconut flour until smooth. Chill for about 10 minutes before pouring over the cheesecake layer.
  6. Bake for approximately 20-25 minutes until set. Cool completely before slicing into bars.
