  • 23 tbsp rice flour
  • 1 tbsp sugar
  • ¼ tsp salt
  • Shredded mozzarella cheese
  • 12 tbsp oil (for cooking)

Instructions

  1. Peel and chop the potato into large chunks. Steam for 10-15 minutes until soft.
  2. In a mixing bowl, mash the steamed potatoes and combine with rice flour, sugar, and salt until smooth.
  3. Take spoonfuls of dough, roll into balls, and flatten them in your palm.
  4. Add shredded mozzarella cheese to the center, wrap the dough around it, and pinch to seal.
  5. Heat oil in a non-stick pan over medium-high heat. Cook each pancake for about 10-12 minutes, flipping until golden brown.
