  • 2 cups potatoes (chopped into 1-inch pieces)
  • 2 hard-boiled eggs (cut into bite-sized pieces)
  • ½ English cucumber (thinly sliced)
  • ¼ cup corn
  • ¼ cup carrots (small dice)
  • ¼ cup apple (small dice)
  • ⅓ cup mayo
  • 1½ teaspoons rice apple vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Prepare the cucumber by tossing it with salt and letting it sit for 10 minutes to draw out moisture. Squeeze out excess moisture and set aside.
  2. Boil the chopped potatoes in salted water until fork-tender. Add diced carrots during the last three minutes of cooking, then drain and set aside.
  3. In a large bowl, combine the potatoes, carrots, cucumber, corn, apple, and hard-boiled eggs.
  4. In another bowl, mix mayo, rice apple vinegar, sugar, salt, and black pepper to create the dressing.
  5. Pour the dressing over the potato mixture and toss gently to combine. Adjust seasoning if necessary.
