  • 2 quarts chicken stock or broth
  • 1 bunch green onions
  • 1 garlic clove
  • 1 piece ginger (3-inch)
  • 2 Tablespoons soy sauce
  • 1 ½ teaspoons rice vinegar
  • 1 Tablespoon brown sugar
  • 1 teaspoon Kosher salt
  • 1 pound ground beef
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons cornstarch
  • 3 heads baby bok choy
  • 20 wonton wrappers

Instructions

  1. In a large saucepan, heat chicken stock over medium-high heat. Add chopped white parts of green onions, garlic, sliced ginger, soy sauce, vinegar, brown sugar, and salt. Bring to a boil.
  2. In a mixing bowl, combine ground beef with the remaining chopped green onion tops, grated ginger, soy sauce, sesame oil, salt, and cornstarch. Mix well.
  3. Form meatballs and drop into the boiling broth. Reduce heat and simmer for five minutes.
  4. Add wonton wrappers and chopped bok choy to the pot. Cook for an additional eight minutes until tender.
  5. Serve hot with reserved green onions on top and optional Sriracha.
