  • 4 salmon fillets (6 oz each)
  • 2 lemons (1 for juice, 1 for slices)
  • 4 cloves garlic (minced)
  • 4 medium potatoes (about 2 lbs)
  • 1 lb broccoli florets
  • Unsalted butter
  • Olive oil
  • Fresh parsley (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Optionally line a baking sheet with parchment paper.
  2. Wash and cube the potatoes. Toss them in olive oil, salt, black pepper, and paprika in a large bowl until coated. Spread on one side of the baking sheet.
  3. Roast the potatoes for 25 minutes, stirring halfway through.
  4. While they roast, melt butter in a saucepan over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant. Stir in lemon juice and season.
  5. After 15 minutes of roasting the potatoes, push them aside on the baking sheet and add salmon fillets. Spoon lemon butter sauce over the salmon and top with lemon slices. Add broccoli florets drizzled with olive oil and season.
  6. Roast everything together for an additional 15-20 minutes until salmon is cooked through and broccoli is tender.
  7. Let rest briefly before serving.
