  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/2 cup sliced jalapeños (optional)
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
  3. Spread seasoned potatoes on a parchment-lined baking sheet and roast for 25-30 minutes, flipping halfway through for even crispiness.
  4. While potatoes roast, heat a skillet over medium-high heat and cook ground beef until browned (5–7 minutes). Drain excess fat.
  5. Add taco seasoning and water to the skillet; stir well and simmer for 2–3 minutes until thickened.
  6. In a small pot, heat black beans and corn over low heat until warmed through.
  7. Assemble bowls by layering roasted potatoes with beef mixture, black beans, corn, and shredded cheese.
  8. Top each bowl with sour cream, cilantro, diced tomatoes, green onions, and jalapeños if desired.
