  • 2 Tbsp extra virgin olive oil
  • 5 cloves garlic (minced)
  • 8 oz cream cheese
  • 1/2 cup heavy cream
  • 3/4 cup grated parmesan cheese
  • 3/4 cup white cheddar cheese
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 tsp garlic powder
  • 2 Tbsp Panko bread crumbs
  • 2 Tbsp parmesan cheese (for topping)
  • 1/2 Tbsp unsalted butter (melted)

Instructions

  1. Prepare the spinach by cooking fresh or thawing frozen spinach until soft. Drain thoroughly to remove excess moisture.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. In a large mixing bowl, combine cooked garlic with cream cheese chunks and heavy cream; mix until smooth.
  4. Fold in grated parmesan and white cheddar cheeses along with salt, black pepper, and garlic powder.
  5. Preheat the oven to 375°F (190°C). Transfer the mixture into a baking dish and top with Panko crumbs and additional parmesan. Drizzle melted butter on top and bake for about 15 minutes or until golden brown.
