  • 1 can (14.5 ounces diced tomatoes, undrained)
  • 4 cups beef broth
  • 1 cup water
  • 1/2 cup long-grain white rice
  • 1 can (15 ounces black beans, drained and rinsed)
  • 1 cup frozen corn
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper (to taste)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
  2. Add diced onion, bell pepper, and optional jalapeño; sauté for about 5 minutes until softened. Stir in minced garlic for another minute.
  3. Mix in spices—cumin, chili powder, smoked paprika, and oregano—and cook for an additional minute.
  4. Add diced tomatoes with juice, followed by beef broth and water. Bring to a boil.
  5. Stir in rice, reduce heat to low, and let simmer for about 15 minutes until rice is tender.
  6. Incorporate black beans and corn; simmer for another 5 minutes until heated through.
  7. Season with salt and pepper; stir in lime juice and chopped cilantro before serving.
