  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar (for swirl)
  • 1 tablespoon cinnamon (for swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper.
  2. In a large bowl, mix together shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla until well combined.
  3. In another bowl, whisk together flour, sugar, baking powder, salt, and spices. Gradually add this dry mixture to the wet ingredients and stir until just combined.
  4. For the cinnamon swirl mixture, combine additional sugar and cinnamon in a small bowl.
  5. Pour half of the batter into the prepared pan and sprinkle half of the cinnamon mixture on top. Add the remaining batter and top with the rest of the cinnamon mixture.
  6. Use a knife to create a swirl effect by gently running it through the batter.
  7. Bake for 60–65 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool for 10–15 minutes before slicing.
