  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar (for the cinnamon swirl)
  • 1 tablespoon cinnamon (for the cinnamon swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper.
  2. In a large bowl, mix together zucchini, eggs, vegetable oil, Greek yogurt, and vanilla until well combined.
  3. In another bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves. Gradually add this dry mixture to the wet ingredients while stirring gently.
  4. For the cinnamon swirl: combine granulated sugar with cinnamon in a small bowl.
  5. Pour half of the batter into the prepared pan; sprinkle half of the cinnamon sugar mixture on top. Repeat with remaining batter and cinnamon sugar.
  6. Use a knife to gently swirl through the layers for a marbled effect.
  7. Bake for 60-65 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Let cool in the pan for 10-15 minutes before transferring to wire rack to cool completely.
