  • 1/4 cup unsalted butter (room temperature, for monster cookie layer)
  • 1/3 cup brown sugar (packed light or dark, for monster cookie layer)
  • 1/8 cup white granulated sugar (for monster cookie layer)
  • 1/4 cup peanut butter (creamy, for monster cookie layer)
  • 1 tsp pure vanilla extract (for monster cookie layer)
  • 1 large egg (room temperature, for monster cookie layer)
  • 1/2 cup quick oats (for monster cookie layer)
  • 1/2 cup mini chocolate chips (for monster cookie layer)
  • 1/2 cup mini M&M's (for monster cookie layer)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a bowl, mix melted butter and sugar until smooth, then add eggs, oil, and vanilla.
  3. Combine dry ingredients separately, then fold into the wet mixture along with chocolate chips.
  4. For the monster cookie layer, cream together butter, sugars, peanut butter, and egg; mix in dry ingredients and oats until well combined.
  5. Spread the monster cookie batter over the brownie layer in the pan.
  6. Bake for about 40 minutes until a toothpick comes out mostly clean. Allow cooling before cutting into bars.
