  • 1.5 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper (optional)
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 3 large carrots, sliced
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. In a large pot or Dutch oven over medium-high heat, heat the olive oil. Add the beef cubes and brown on all sides for about 5–7 minutes. Remove from pot and set aside.
  2. In the same pot, sauté the chopped onion until softened (about 5 minutes). Stir in minced garlic and cook for an additional minute.
  3. Add ground cumin, coriander, cinnamon, turmeric, paprika, and optional cayenne pepper. Toast spices for about 2 minutes.
  4. Return the browned beef to the pot along with diced tomatoes and beef broth. Bring to a boil then reduce heat to low; cover and simmer for about 1 hour.
  5. After an hour, stir in chickpeas and mixed vegetables. Season with salt and pepper to taste. Cover and simmer for an additional 30 minutes.
  6. Serve hot garnished with fresh herbs if desired.
