Instructions

  1. In a microwave-safe bowl, combine peanut butter and maple syrup. Microwave for 40-60 seconds until warm, then stir until smooth.
  2. Gradually mix in oat flour until you achieve a thick, moldable consistency. Adjust with more maple syrup or peanut butter if needed.
  3. Line a muffin pan with liners or use a silicone pan. Press the mixture firmly into each muffin hole.
  4. Melt chocolate chips and optional coconut oil in another bowl using short microwave bursts until smooth.
  5. Pour melted chocolate over the peanut butter mixture in each cup and smooth it out.
  6. Refrigerate for 2-3 hours until set before carefully removing from the pan.
