  • 16 oz softened cream cheese
  • 2 tbsp sugar
  • 1 lb strawberries
  • 16 oz heavy whipping cream
  • Fresh strawberries (for garnish)
  • Additional whipped topping (for serving)

Instructions

  1. Prepare the crust by crushing graham crackers in a food processor until fine crumbs form. Mix with melted butter and sugar, then press into the bottom of a springform pan. Refrigerate for 30 minutes.
  2. In a large bowl, beat softened cream cheese with sugar until smooth. In another bowl, whip heavy cream until stiff peaks form, then gently fold into the cream cheese mixture.
  3. Puree strawberries in a food processor and fold into the cheesecake filling until well combined.
  4. Spread the filling over the chilled crust and freeze for about 2 hours until set.
  5. Before serving, let thaw for 30 minutes at room temperature and garnish with sliced strawberries and whipped topping.
