  • 68 oz chicken thighs (cut into bite-sized pieces)
  • 1/4 cup frozen mixed vegetables
  • 3 brown mushrooms (diced)
  • 2 cups cooked white rice (day-old)
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 6 large eggs (divided)
  • 2 tablespoons milk (divided)
  • 1/2 teaspoon salt (divided)
  • Ketchup (for serving)
  • 1 tablespoon parsley (minced for serving)

Instructions

  1. In a skillet over medium heat, sauté onions and garlic until fragrant. Add chicken and cook until browned.
  2. Stir in mixed vegetables and mushrooms; cook for a few minutes. Add day-old rice, ketchup, soy sauce, and half of the salt; mix well.
  3. In a mixing bowl, whisk together 4 eggs, 1 tablespoon milk, and remaining salt.
  4. In another skillet over low heat, pour in the egg mixture and cook gently until edges set but center remains runny.
  5. Spoon the fried rice onto one half of the omelet. Fold the other half over the rice and slide onto a plate.
  6. Drizzle with additional ketchup if desired and garnish with parsley before serving.
