  • 3 medium Potatoes (peeled and diced)
  • 1 medium Onion (chopped)
  • 1 bell pepper (chopped)
  • 2 cloves Garlic (minced)
  • 1 cup Beef Broth (or chicken broth)
  • 1 cup Cheddar Cheese (shredded)
  • Olive Oil
  • 1 tsp Paprika
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced potatoes; cook for 8-10 minutes until slightly softened. Remove and set aside.
  2. In the same skillet, sauté onion, bell pepper, and garlic with seasonings for 3-4 minutes until softened.
  3. Return potatoes to the skillet; pour in beef broth and mix well.
