  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add sausage rounds and brown for 4–5 minutes. Remove and set aside.
  2. Sauté onion and bell pepper in the same skillet for 3–4 minutes. Stir in garlic and cook for an additional 30 seconds.
  3. Add smoked paprika and black pepper to the skillet. Stir in uncooked rice and toast for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce, stirring well before returning the sausage to the pan.
  5. Bring to a boil, cover, reduce heat to low, and simmer for 20–22 minutes until rice is tender.
  6. Let rest for 5 minutes before fluffing with a fork. Garnish with chopped parsley before serving.
