Ingredients

Scale
  • 1 tablespoon canola oil
  • 3 large carrots (peeled and finely chopped)
  • 1 medium onion (finely chopped)
  • 1 rib celery (finely chopped)
  • 2 teaspoons Italian seasoning
  • 1 teaspoon minced garlic
  • 1 lb lean ground beef
  • 5 cups low sodium beef broth
  • 798 ml canned diced tomatoes (28 oz)
  • 1 1/2 cups whole wheat macaroni pasta (uncooked)
  • 1 cup tomato sauce

Instructions

  1. Heat the canola oil in a large pot over medium-high heat. Add the carrots, onion, and celery; cook for about 3-4 minutes until softened.
  2. Stir in the Italian seasoning, garlic, salt, paprika, black pepper, and red pepper flakes; cook for an additional minute.
  3. Add the ground beef to the pot, breaking it apart as it cooks until lightly browned (about 2-3 minutes).
  4. Pour in the beef broth and diced tomatoes; bring to a boil. Cover and simmer for about 5-10 minutes until the carrots are tender.
  5. Stir in the whole wheat macaroni and tomato sauce. Cover again and cook for another 7-8 minutes or until the pasta is al dente.
