  • 4 1/4 cups low sodium chicken broth
  • 1/2 cup feta
  • 1/4 cup lemon juice
  • 1/2 red onion, chopped
  • 2 ears grilled corn, cut off the cob
  • 1 English cucumber, sliced and quartered
  • 1 red bell pepper, chopped
  • 1 pint cherry tomatoes, halved
  • 1 can garbanzo beans (chickpeas), drained and rinsed
  • 1/2 cup pitted Kalamata olives, halved
  • 1/2 cup sliced almonds
  • 1/2 cup fresh basil, chopped
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons red apple vinegar
  • 1 tablespoon sugar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1 tablespoon fresh dill parsley
  • 1 tablespoon oregano
  • 1/4 tsp EACH salt, pepper

Instructions

  1. Prepare the dressing by mixing olive oil, lemon juice, vinegar, basil, and feta in a small bowl or jar; refrigerate until ready.
  2. In a large nonstick skillet over medium-low heat, combine butter and olive oil. Sauté orzo with chopped onion for about 3-5 minutes until softened.
  3. Stir in chicken broth along with lemon juice, salt, and pepper. Simmer until orzo is al dente (8-10 minutes). Drain excess liquid if necessary and cool in the refrigerator.
  4. Once cooled, mix the cooked orzo with all remaining salad ingredients in a large bowl. Pour dressing over the mixture and toss to combine.
  5. Taste and adjust seasoning as needed before serving.
