  • 1 cup diced onion
  • 1 cup chopped carrot
  • 1 cup chopped celery
  • 4 cloves garlic, minced
  • 2 cans diced tomatoes (14.5 oz each)
  • 15 oz can tomato sauce
  • 15 oz can red kidney beans, drained and rinsed
  • 15 oz can Great Northern beans, drained and rinsed
  • 2.5 cups V-8 juice
  • 8 ounces dry ditali pasta

Instructions

  1. In a Dutch oven over medium heat, brown the ground beef until cooked through.
  2. Drain excess grease and return the beef to the pot. Add onion, carrot, celery, and garlic; sauté until softened (5-10 minutes).
  3. Stir in Italian seasoning and dried basil; cook for an additional 30 seconds.
  4. Add diced tomatoes, tomato sauce, beans, and V-8 juice; stir to combine.
  5. Cover and simmer on medium-low heat for about 50 minutes.
  6. In a separate pot, cook ditali pasta according to package instructions until al dente.
  7. Drain pasta and stir it into the simmering soup for an additional 5 minutes before serving.
