  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 cup small pasta (like ditalini or elbow)
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Parmesan cheese for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until translucent.
  2. Stir in carrots and celery; cook for about 5 minutes until softened.
  3. Add oregano, thyme, and bay leaf; cook for an additional minute.
  4. Mix in diced tomatoes with juices; stir well.
  5. Pour in broth and bring to a boil.
  6. Reduce heat and simmer for 15 minutes.
  7. Stir in beans and pasta; cook until pasta is al dente, about 8–10 minutes.
  8. Season with salt and pepper; remove bay leaf before serving.
