  • 2 cups Old-Fashioned Rolled Oats
  • 1/2 cup Unsweetened Shredded Coconut
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Salt
  • 1/3 cup Maple Syrup
  • 1 3/4 cup Almond Milk
  • 1/4 cup Dairy-Free Greek Yogurt
  • 1 Flaxseed Egg (1 tbsp flax meal + 3 tbsp water)
  • 2 1/2 cups Diced Peaches

Instructions

  1. Preheat the oven to 350°F (180°C) and spray an 8-inch x 8-inch baking dish with oil.
  2. Prepare the flax egg by mixing flax meal with water and letting it thicken for about 10 minutes.
  3. Dice the peaches and set aside.
  4. In a large bowl, whisk together the flax egg, almond milk, dairy-free yogurt, melted coconut oil, vanilla extract, and maple syrup until smooth.
  5. Stir in rolled oats, chia seeds, shredded coconut, salt, and cinnamon until well combined.
  6. Gently fold in the diced peaches into the mixture.
  7. Pour into the prepared baking dish and bake for about 35 minutes or until set and golden brown on top.
