  • 10 oz challah or French bread, cut into large chunks
  • 24 ounces frozen sliced peaches, thawed and drained (or any fruit you prefer)
  • 1 1/4 cups almond milk
  • 5 eggs
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 2 tsp light butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 13×9 casserole dish.
  2. In a bowl, whisk together eggs and sugar until combined. Stir in almond milk, vanilla, cinnamon, and salt.
  3. Place bread chunks in the casserole dish and pour the egg mixture over them, pressing down gently to soak.
  4. Cover and refrigerate overnight.
  5. Before baking, layer thawed peaches on top of the soaked bread.
  6. For the topping, mix flour, brown sugar, light butter, and cinnamon until crumbly; sprinkle over peaches.
  7. Bake uncovered for 45–60 minutes until golden brown and set. Let cool for about 10 minutes before serving.
