  • 16 oz cream cheese (room temperature)
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ cup sour cream (room temperature)
  • 1½ cups fresh peaches (peeled & sliced)
  • ½ cup all-purpose flour
  • ½ cup granulated sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 6 tablespoons cold unsalted butter (cut into small pieces)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. For the crust, combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix until moistened and press firmly into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until combined, then pour over the crust.
  4. For the topping, mix sliced peaches with flour, sugar, cinnamon, and nutmeg in a separate bowl. Toss gently to coat peaches and sprinkle evenly over the cheesecake layer. Dot with cold butter pieces on top.
  5. Bake for 45–50 minutes or until set around the edges but slightly jiggly in the center. Allow cooling completely before cutting into bars.
