  • 1/2 teaspoon baking soda

  • 1/4 cup unsalted butter (softened)
  • 3/4 cup firmly packed light brown sugar
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 1/2 cups mashed banana (about 3 or 4 medium overripe bananas)
  • 1/2 to 2/3 cups chopped nuts (such as pecans, walnuts, hazelnuts, or peanuts) (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9" x 5" loaf pan and optionally line with parchment paper.
  2. In a mixing bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt; set aside.
  3. Using an electric mixer, cream together the softened butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time, then mix in vanilla.
  4. Gradually add the flour mixture in three portions alternating with two portions of sour cream until just combined.
  5. Gently fold in the mashed bananas and optional chopped nuts if using.
  6. Pour the batter into the prepared loaf pan and bake for about 50 to 55 minutes until golden brown and a toothpick inserted comes out clean.
  7. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
