  • 1/2 cup pumpkin puree
  • 1 1/2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 12 slices Texas toast (or french bread, challah)

Instructions

  1. Preheat a large non-stick skillet over medium heat. Melt a small amount of butter.
  2. In a rectangular baking dish, whisk together eggs, milk, pumpkin puree, vanilla extract, ground cinnamon, and pumpkin pie spice until fully combined.
  3. Dip each slice of bread into the mixture, ensuring both sides are coated before placing them in the skillet.
  4. Cook each slice for about 2-3 minutes on each side until golden brown.
  5. For the whipped pumpkin butter, beat softened butter in a mixing bowl until fluffy. Add pumpkin puree, maple syrup (or honey), vanilla extract, cinnamon, and pumpkin pie spice; mix until well combined.
