  • 150 g Brown sugar
  • 2 tsp Vanilla extract
  • 3 Eggs
  • 180 ml Vegetable oil
  • 400 g Pumpkin puree
  • 230 g All purpose flour
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • 2 tsp Cinnamon
  • 1 tsp Ground ginger
  • ¼ tsp Nutmeg
  • ¼ tsp Ground cloves
  • ¼ tsp Ground black pepper
  • 150 g unsalted butter
  • 80 g Brown sugar
  • 160 g Cream cheese
  • 220 g Icing sugar
  • Orange food color
  • Pumpkin seeds

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. In a bowl, mix flour, baking powder, baking soda, and spices.
  3. In another bowl, beat together white granulated sugar, brown sugar, eggs, oil, vanilla extract, and pumpkin puree until smooth.
  4. Gradually combine wet and dry ingredients until just mixed.
  5. Pour batter into the prepared pan and bake for about 60 minutes or until a toothpick comes out clean.
  6. Let cool before transferring to a cooling rack.
  7. For frosting, beat unsalted butter and brown sugar until creamy; add cream cheese and icing sugar gradually until smooth.
  8. Once the cake is completely cool, frost it generously and garnish with pumpkin seeds if desired.
