  • 2 cups vegetable broth
  • 1 cup pumpkin puree
  • 2 cups fresh spinach, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian herbs
  • Salt and pepper to taste
  • 1 cup mozzarella cheese, shredded

Instructions

  1. In a large pot, bring vegetable broth to a boil. Gradually whisk in polenta and stir continuously until thickened (about 5 minutes). Remove from heat.
  2. In a skillet over medium heat, add olive oil. Sauté diced onion until translucent (3–4 minutes). Add garlic and cook for another minute before stirring in chopped spinach and Italian herbs; cook until spinach wilts.
  3. Preheat the oven to 375°F (190°C). In a greased baking dish, layer half of the polenta mixture at the bottom. Spread the spinach mixture over it evenly and top with remaining polenta followed by shredded mozzarella.
  4. Bake for 25–30 minutes or until golden brown and bubbly. Let cool slightly before serving.
