  • 20g coconut oil
  • 100g coconut milk (fat only)
  • 40g frozen raspberries
  • 2 tbsp agave syrup
  • 1 tsp vanilla extract
  • 100g dark chocolate
  • Pinch of salt

Instructions

  1. In a saucepan, combine desiccated coconut, salt, coconut milk, coconut oil, agave syrup, vanilla extract, and frozen raspberries. Heat over medium while stirring until melted and well mixed. Remove from heat.
  2. Spread the mixture into a lunchbox lined with parchment paper to form bars or shape into balls using silicone molds.
  3. Freeze for approximately 2 hours until firm.
  4. Melt dark chocolate in a double boiler or microwave until smooth. Dip each bar or ball into the melted chocolate, coating thoroughly.
  5. Chill in the fridge for about an hour until the chocolate sets.
