  • two 12-ounce bags of frozen raspberries
  • 1/2 cup granulated sugar
  • 2 tablespoons flour
  • 1 tablespoon cornstarch
  • juice of one lemon
  • 3 cups rolled oats
  • 3 cups flour
  • 2 cups brown sugar (loosely packed)
  • 1 teaspoon baking powder
  • 1 1/2 cups melted butter
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F.
  2. Rinse and drain two bags of frozen raspberries in a colander.
  3. In a mixing bowl, combine drained raspberries with sugar, flour, cornstarch, and lemon juice.
  4. In another bowl, mix rolled oats, flour, brown sugar, baking powder, melted butter, and salt until crumbly.
  5. Press two-thirds of the oat mixture into a lined 9×13 inch baking pan and bake for 10 minutes.
  6. Spread the raspberry filling over the baked base and sprinkle the remaining oat mixture on top.
  7. Bake for an additional 25-30 minutes until golden brown.
  8. Allow to cool completely before slicing.
