  • 2 tablespoons extra virgin olive oil
  • ¼ cup honey
  • 12 tablespoons hot sauce (such as sriracha)
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic
  • ½ teaspoon salt (or more to taste)
  • â…› teaspoon black pepper
  • ½ cup water

Instructions

  1. Preheat oven to 425°F (220°C). Peel and chop the carrots into even pieces.
  2. Toss carrots with olive oil, salt, and pepper in a large bowl. Spread on a baking tray and add water.
  3. Bake for 20 minutes. Meanwhile, combine honey, hot sauce, smoked paprika, and salt in a saucepan; simmer for 3 minutes. Stir in apple cider vinegar.
  4. Drain excess water from the carrots and coat them with half the hot honey glaze. Add crushed garlic and return to the oven for another 20 minutes until tender.
  5. Serve with reserved glaze drizzled on top.
