  • 1 whole chicken (45 lbs)
  • 1 ½ sticks softened butter
  • 4 cloves garlic (minced)
  • 1 tablespoon Bayou City All Purpose Seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne (optional)
  • 1 lemon (zest)
  • 1 lb baby potatoes (halved)
  • 1 lb carrots (roughly chopped)
  • ½ cup white apple vinegar or chicken stock

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Season the chicken with salt and set aside.
  3. In a mixing bowl, combine softened butter, minced garlic, spices, and lemon zest.
  4. Rub the garlic butter all over the chicken, including under the skin and inside the cavity.
  5. Toss potatoes and carrots with olive oil, seasoning, and place them in a roasting pan.
  6. Position the chicken breast-side up on a rack over vegetables. Pour in vinegar or stock.
  7. Roast for about 1 hour 30 minutes until internal temperature reaches 165°F (75°C), basting every 30 minutes.
  8. Let rest for 10-15 minutes before carving and serving.
