  • 1/4 cup plain unsweetened almond milk
  • 1/2 cup paleo mayo (homemade or store bought)
  • 1 Tbsp lemon juice
  • 1 tsp fresh minced dill (or 1/4 tsp dried)
  • 1 garlic clove (minced)
  • 2 Tbsp chopped chives
  • Sea salt & black pepper to taste
  • 1 lb individual salmon fillets (skin on or off; 34 fillets)
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder
  • 3/4 tsp smoked paprika
  • 3/4 tsp sea salt
  • 1/8 teaspoon black pepper
  • 1 Tbsp turkey bacon fat (avocado oil or ghee)
  • 6 cups mixed greens of choice (roughly chopped)
  • 1 cup cherry tomatoes (halved)
  • 6 slices turkey bacon (cooked until crisp and crumbled or chopped)
  • 1 medium avocado (thinly sliced)
  • 1 small red onion (thinly sliced)

Instructions

  1. In a large mixing bowl, combine almond milk, paleo mayo, lemon juice, minced dill, minced garlic, chopped chives, sea salt, and black pepper. Whisk until smooth and set aside.
  2. Season salmon fillets with garlic powder, onion powder, smoked paprika, sea salt, and black pepper. Heat turkey bacon fat over medium heat. Add salmon fillets skin-side down and cook for about 5–7 minutes per side until cooked through.
  3. In a large serving bowl, layer mixed greens at the bottom. Top with halved cherry tomatoes, crumbled turkey bacon, sliced avocado, and thinly sliced red onion. Flake cooked salmon over the top.
  4. Drizzle chive ranch dressing over the assembled salad just before serving for maximum freshness!
