  • 150g salmon fillet
  • 1 cup uncooked brown rice
  • 2 eggs
  • Avocado, diced
  • Salt & pepper, to taste

Instructions

  1. Cook the Rice: Rinse brown rice under cold water. Combine with water and a pinch of salt in a pot. Bring to a boil, then reduce heat, cover, and simmer for 25-30 minutes until tender.
  2. Bake the Salmon: Preheat oven to 180C (350F). Season salmon fillet with salt and pepper, place on a baking tray, and bake for 12-15 minutes until cooked through.
  3. Soft-Boil the Eggs: Bring a pot of water to a boil. Gently lower in eggs and cook for 6-7 minutes. Transfer to an ice bath, peel, and cut in half.
  4. Assemble the Bowl: Add cooked brown rice to a bowl followed by baked salmon, diced avocado, and halved soft-boiled eggs. Season with salt and pepper.
