  • 1 salmon fillet
  • 1 cup sliced mushrooms
  • 1 avocado, diced
  • 1 cup arugula
  • 45 cherry tomatoes, halved
  • 12 soft-boiled eggs
  • 1 tsp olive oil
  • Salt & pepper to taste
  • 1 tsp smoked paprika (optional)
  • 1 garlic clove, minced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the salmon with olive oil, salt, pepper, and smoked paprika if desired. Sear in a skillet over medium-high heat for 4-5 minutes per side until cooked through. Flake and set aside.
  2. In the same skillet, heat olive oil or butter over medium heat and sauté sliced mushrooms for 5-6 minutes until golden brown. Add minced garlic towards the end of cooking.
  3. Boil eggs for 6-7 minutes for jammy yolks; cool in ice water before peeling.
  4. Assemble the plate with flaked salmon, sautéed mushrooms, diced avocado, arugula leaves, halved cherry tomatoes, and soft-boiled eggs.
