  • 1/4 cup shredded coconut
  • 1/2 cup creamy almond butter
  • 3 tablespoons pure maple syrup
  • 2 large soft medjool dates, pitted
  • 1 teaspoon pure vanilla extract
  • 1/2 cup old-fashioned rolled oats
  • 1 scoop vanilla protein powder
  • 1/4 teaspoon kosher salt
  • 1 tablespoon chia seeds
  • 1 tablespoon mini chocolate chips
  • Flaky sea salt for topping
  • 1/2 cup chocolate chips
  • 1/2 teaspoon coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C). Spread shredded coconut on a parchment-lined baking sheet and toast for about 5 minutes.
  2. In a food processor, combine almond butter, maple syrup, dates, vanilla extract, oats, protein powder, and salt; blend until smooth.
  3. Fold in toasted coconut, chia seeds, and mini chocolate chips. Form mixture into balls about 1 tablespoon each.
  4. Melt chocolate chips with coconut oil in a microwave-safe bowl in intervals until smooth.
  5. Dip the bottoms of each ball in melted chocolate and place them back on the parchment-lined tray. Drizzle with more chocolate, sprinkle with remaining toasted coconut and flaky sea salt.
  6. Refrigerate for about an hour until set.
