Ingredients

  • Chicken breast pieces
  • Potatoes, cubed
  • Red bell pepper
  • Green bell pepper
  • Garlic cloves, minced
  • Olive oil
  • Mixed dried herbs (oregano, thyme, basil)
  • Paprika
  • Salt & pepper
  • Steamed white rice

Instructions

  1. In a large bowl, combine chicken breast pieces and cubed potatoes. Add minced garlic, olive oil, mixed herbs, paprika, salt, and pepper. Mix well.
  2. Heat a skillet over medium heat or preheat the oven to 400°F (200°C). If using a skillet, stir-fry the mixture for 15-20 minutes until golden brown and tender. For oven cooking, spread in a roasting pan and roast for 25-30 minutes.
  3. Add sliced red and green bell peppers during the last 5 minutes of cooking until softened.
  4. Serve with steamed rice and garnish with chopped fresh chives.
