  • 1/2 cup broccoli florets
  • 1/4 cup sliced mushrooms
  • 1/4 cup diced sweet potato (small cubes)
  • 1 green chili or jalapeño, sliced
  • 1 tsp olive oil (for sautéing)
  • 1/2 avocado, sliced

Instructions

  1. In a skillet over medium-high heat, heat olive oil and sauté diced sweet potato for about 3-4 minutes.
  2. Add broccoli, mushrooms, and green chili to the skillet; cook for another 4-5 minutes until tender. Season with salt and pepper.
  3. In a bowl, whisk together the eggs with milk (if using), salt, and pepper. Heat butter or olive oil in another pan over low-medium heat.
