  • 100 g butter (for pastry)
  • 100 ml boiling water
  • 400 g ground lamb or beef
  • 1 tsp finely chopped onion
  • 1 tsp white pepper
  • 0.5 tsp black pepper
  • 0.5 tsp ground mace
  • 0.25 tsp ground nutmeg
  • 1 beaten egg (for brushing)

Instructions

  1. Make the Pastry: In a saucepan, heat butter and boiling water until it simmers. Pour over flour and half the salt in a mixing bowl. Stir well and knead until smooth.
  2. Prepare the Filling: Mix ground lamb or beef with onion, spices, and remaining salt in another bowl until combined.
  3. Shape the Pies: Roll out pastry to about 1/8-inch thick; cut circles for bases and tops using a cookie cutter. Line pie rings with larger circles.
  4. Fill and Seal: Spoon filling into each case, moisten edges with water, then place tops on pies and seal tightly.
  5. Bake: Brush with beaten egg for a golden finish. Bake in a preheated oven at 180°C (350°F) for 30–35 minutes until golden brown.
  6. Cool & Serve: Let cool before serving; enjoy them hot, warm, or at room temperature.
