  • 1 salmon fillet
  • 1 cup cauliflower rice
  • 1 cup diced carrots and celery
  • 68 cherry tomatoes
  • 45 asparagus spears
  • lemon, sliced
  • 1 tbsp olive oil
  • Salt & black pepper to taste

Instructions

  1. Season the salmon fillet with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the salmon skin-side down for about 4 minutes, then flip and cook for an additional 4 minutes until cooked through.
  2. On a baking sheet, toss asparagus and cherry tomatoes with olive oil and a pinch of salt. Roast in the oven until blistered.
  3. In another skillet, sauté cauliflower rice with diced carrots and celery until tender. Season to taste.
  4. Grill lemon slices until caramelized for added flavor.
  5. Plate your meal by arranging the salmon on top of the cauliflower rice with roasted veggies on the side. Garnish with charred lemon slices.
