- 1 lb chicken breasts
- 5 medium-sized potatoes, chopped
- 2 tbsp olive oil
- 1 cup shredded mozzarella cheese
- Buffalo Wild Wings Garlic Parmesan Sauce (to coat chicken)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 2 tbsp minced garlic
- Wash and chop the potatoes into bite-sized pieces. Toss them with olive oil and seasonings in a mixing bowl.
- Layer the seasoned potatoes in the bottom of the slow cooker.
- Season the chicken breasts with salt, pepper, paprika, onion powder, and Italian seasoning; place them on top of the potatoes.
- Spread minced garlic over the chicken and pour enough sauce to coat.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is cooked through.
- In the last 30 minutes of cooking, sprinkle mozzarella cheese on top and cover to melt.
- Serve warm, garnished with extra Parmesan or herbs if desired.
