  • 1 lb chicken breasts
  • 5 medium-sized potatoes, chopped
  • 2 tbsp olive oil
  • 1 cup shredded mozzarella cheese
  • Buffalo Wild Wings Garlic Parmesan Sauce (to coat chicken)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic

Instructions

  1. Wash and chop the potatoes into bite-sized pieces. Toss them with olive oil and seasonings in a mixing bowl.
  2. Layer the seasoned potatoes in the bottom of the slow cooker.
  3. Season the chicken breasts with salt, pepper, paprika, onion powder, and Italian seasoning; place them on top of the potatoes.
  4. Spread minced garlic over the chicken and pour enough sauce to coat.
  5. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is cooked through.
  6. In the last 30 minutes of cooking, sprinkle mozzarella cheese on top and cover to melt.
  7. Serve warm, garnished with extra Parmesan or herbs if desired.
