  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 packet (1 oz) taco seasoning mix
  • 1 can (14.5 oz) diced tomatoes with green chilies (Rotel)
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 can (15 oz) corn (drained)
  • 1 cup salsa
  • 6 small flour or corn tortillas (cut into strips)
  • 1 cup shredded Mexican cheese blend
  • Fresh cilantro (chopped, for garnish)
  • Sour cream (for serving)
  • Sliced jalapeños (optional, for serving)
  • Diced avocado (optional, for serving)

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef until fully cooked; drain excess fat.
  2. Add diced onion to the skillet and sauté until softened. Stir in minced garlic for an additional minute.
  3. Mix in taco seasoning and diced tomatoes, then remove from heat.
  4. Spray the slow cooker with non-stick spray. Layer salsa at the bottom, followed by tortilla strips, half of the beef mixture, black beans, and corn. Repeat layers finishing with tortilla strips topped with remaining salsa.
  5. Cook on low for 4-5 hours or high for 2-3 hours.
  6. About 15 minutes before serving, sprinkle cheese on top, cover, and let melt.
  7. Garnish with cilantro; serve with sour cream and optional toppings.
