  • 1 (4-5 lb) lamb shoulder, bone-in
  • 6 cloves garlic, minced
  • 2 tbsp Dijon mustard
  • 2 tbsp whole grain mustard
  • 3 tbsp honey
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves
  • 1 tsp ground black pepper
  • 2 tsp sea salt

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a bowl, mix minced garlic, both mustards, honey, rosemary, thyme, black pepper, and sea salt to create the glaze.
  3. Pat the lamb shoulder dry and place it fat-side up in a roasting pan. Coat generously with half the glaze.
  4. Cover the pan tightly with aluminum foil and roast for 4–5 hours or until internal temperature reaches 190°F (88°C).
  5. Let rest for at least 20 minutes before serving; brush remaining glaze over meat before slicing.
