  • 1 lamb shoulder (bone-in, approx. 4.5 lbs)
  • 6 cloves garlic, minced
  • 3 tbsp Dijon mustard
  • 2 tbsp whole grain mustard
  • 3 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1/4 cup olive oil
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Pat the lamb shoulder dry and score the fat in a crisscross pattern.
  3. In a bowl, mix garlic, mustards, honey, vinegar, olive oil, rosemary, and thyme to make the glaze.
  4. Rub the glaze generously over the lamb shoulder.
  5. Place in a roasting pan covered with foil and roast for about 3 hours until tender.
  6. Remove foil in the last hour for browning; check doneness with a meat thermometer (145°F for medium-rare).
  7. Let rest for 15 minutes before slicing.
