  • 8 Tbs butter (room temperature)
  • 1 cup brown sugar (packed)
  • 1/4 cup molasses
  • 2/3 cup pumpkin puree
  • 1 large egg
  • 1/2 cup sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, pumpkin pie spice, and black pepper; set aside.
  3. In a stand mixer, beat butter until creamy. Add brown sugar, molasses, and pumpkin puree; mix well.
  4. Add egg and combine. Gradually mix in dry ingredients until just combined.
  5. Chill dough in plastic wrap for at least 30 minutes.
