  • 1.5 lbs beef chuck, cut into 1-inch cubes
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons Madras curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon tomato paste
  • 1 (14 oz) can diced tomatoes
  • 1/2 cup beef stock
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in garlic and ginger; cook for about 2 minutes until fragrant.
  3. Add the spices and stir well to coat the onions. Cook for another minute.
  4. Brown the beef cubes on all sides for about 5–7 minutes.
  5. Mix in tomato paste and diced tomatoes; add beef stock along with salt and pepper.
  6. Bring to a gentle boil, then reduce heat to low and cover. Simmer for about 1.5 hours until beef is tender.
  7. Finish with lemon juice before serving.
