  • 150g sirloin or ribeye steak
  • 2 large eggs
  • Sliced avocado
  • 1 cup halved cherry tomatoes
  • 1 tbsp olive oil or butter
  • Salt & freshly cracked black pepper
  • Fresh parsley for garnish

Instructions

  1. Pat the steak dry and season generously with salt and pepper. Heat olive oil or butter in a skillet over high heat. Sear the steak for 2-3 minutes on each side for medium-rare. Let it rest for 5 minutes before slicing.
  2. In the same skillet, reduce heat to medium. Crack in the eggs and cook until whites are set but yolks remain runny, about 2-3 minutes.
  3. In a serving bowl, arrange sliced avocado, cherry tomatoes, sliced steak, and cooked eggs.
  4. Garnish with parsley, add salt and pepper to taste, and serve immediately.
