  • 8 tbsp butter

  • â…“ cup brown sugar
  • 1 cup mashed bananas (about 2 bananas)
  • â…“ cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • ¾ cup buttermilk
  • For Toffee Sauce: 8 tbsp butter
  • ¾ cup brown sugar (packed)
  • ¾ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a deep baking dish by spraying it with nonstick spray.
  2. In a large bowl, cream the granulated sugar, brown sugar, and butter until light and fluffy. Mix in eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually combine dry ingredients into the wet mixture until just mixed.
  5. Pour batter into the prepared dish and bake for 45-55 minutes. Check with a toothpick for doneness.
  6. For the toffee sauce, melt butter and brown sugar in a medium pot; add cream and vanilla until smooth.
  7. Once the cake cools slightly, poke holes in it and pour over cooled toffee sauce. Let soak for at least one hour before serving.
